Breakfast Fruit Bread

The sisterhood and family here at Victory enjoy eating this bread, because it is filling and it works well as a different type of bread to break the routine of  biscuits.

Ingredients:

3 cup flour

11/2 cup sugar

1/2 tsp salt

11/2 tsp. baking powder

1/2 tsp nutmeg

1 tsp cinnamon

pinch of ginger (optional)

Wet:

1/2 TBSP vanilla flavor

2 sticks or 1 cup butter

1 cup buttermilk

3/4 c. oil

3 eggs

1 cup nuts (your choice)

1 cup blueberries/ or 2 bananas

1 TBSP coconut flavoring

1/2 TBSP butter & nut flavoring

Preparation:

  1. First combine the flour, sugar, salt, baking powder, nutmeg, cinnamon
  2. Second add the vanilla, coconut flavoring, butter and nut flavoring, oil, butter, and the buttermilk ( be sure it is luke warm before you pour it in your mixture)
  3. Last add the eggs, then start mixing the batter until all is well mixed, after it is all mixed add the nuts, and the blueberries mix very gently (by the way fresh blueberries works very well) then grease your pan, with whatever desired oil, and pour into the pan, make sure all the batter is smoothed evenly in the pan and go ahead and bake.


Bake on 400°  (gas oven) for 45 minutes or until done. Use toothpick to test by sticking it into the bread. If nothing is on the toothpick when you remove it bread is done.
Using the electric conventional oven bake at 390°  for 35 minutes or until done.
