Carrot Cake Pancakes

The sisterhood welcome all recipes that other Achotees share with us. We will share these recipes with you. This recipe was sent to us from Achotee Jessie Alllen. This is how she feels about her carrot cake pancake recipe, "it's like the cake, yum, yum, there is no syrup needed."

Ingredients:

1 ¼ cup or 1 ½ cup organic whole wheat pastry flour

1 tsps. baking powder

2 Tbsps. organic light brown sugar

2-3 Tbsps. ground cinnamon

1  cup milk

1 egg

 ½ cup or more pecan pieces as needed

2-3  dates chppped 

 ½ cups baking raisins extra moist

1/2 shredded carrot

2 Tbsps. oil

Preparation:

Use 1/2 measuring cup to dip batter out, and pour into a slightly greased frying pan. Lightly brown pancakes,  then flip them over until brown on the other side. Remove from pan when pancakes are done.

 

Serving Size for two
