Carrot Pineapple Cake

The sisterhood is diligent at preparing desserts for the Tshuwah's Family. This carrot pineapple cake is loved by all. The wonderful taste of carrots, pineapples, walnuts, and butter make quit an explosion to the palate when it is eaten.

Ingredients:

3 cups flour

2 tsp. baking powder

2 tsp. baking soda

2 tsp. cinnamon

1 tsp. salt

1/2 cup grated carrot

4 eggs

2 ¼ sticks butter or 1 ¼ cup oil

3 cups sugar

1 cup walnuts or pecans

1 cup pineapple

Preparation:

  1. Mix flour, baking soda and baking powder, cinnamon and salt together and set aside.
  2. Beat eggs, butter or oil and sugar together.
  3. Pour the above mixture into flour and beat together.
  4. Mix in pineapples then fold in the nuts.
  5. Pour into flat 9 X 13 inch  pan.
  6. Bake in oven for 35 to 40 minutes or until cake is done.
  7. Remove from oven and allow to cool for 15 to 20 minutes.
  8. Place icing on cake.
  9. Cut the cake in squares and serve.

Frosting:

1/2 stick butter soften

1 box powdered sugar

1 tsp vanilla flavor

1-8oz. box cream cheese

1 TBSP. milk

Pour powdered sugar into bowl. Beat sugar, butter, cream cheese, vanilla, and milk together. Place icing on cake and serve.
