Triple Layer Pumpkin Pie

If you like pumpkins, you will enjoy this recipe. It is easy to prepare and you can watch the faces as they light up when they eat it.

1 box 8 oz. cream cheese

1 tub 16 oz. cool whip (divide tub in half)

2 boxes  3.4 oz. vanilla instant pudding

1 can of  8 oz. pumpkin 

1 tablespoon sugar

2 cups  and 1 tablespoon milk

2 Graham cracker pie crusts

1/2 teaspoon cinnamon

 

Preparation:

  1. Layer 1: Mix cream cheese, sugar, and 1 tablespoon milk. Whisk together until creamy, then pour into crust.
  2. Layer 2: Mix one box of pudding with 1 cup of milk, then add 1 can of  pumpkin. Add cinnamon. 
  3. Pour pudding mixture into pie crust on top of cream cheese mixture.
  4. Layer 3: Mix other box of pudding with one cup of milk and fold in one half of Cool Whip.
  5. Put remaining Cool Whip on top of pies. 
  6. Refrigerate 4-6 hours.

Makes 2 pies.
