Creamy, Cheesy Mushroom Muffins

The sisterhood always look forward to eating the creamy, cheesy mushroom muffins whether they are served at a fancy dinner, or as a side dish. Nobody can eat just one of them.

Ingredients:

1-8oz. cream cheese soften

1-16oz.container mushrooms

1 -medium onion diced

2- TBSP.butter

1- package of shredded cheese (sharp, or monterey jack or 4-cheese)

2- jumbo cans of can biscuits. 

1 medium muffin pan 

Crisco shortening to grease muffin pan.

Preparation:

  1. Place cream cheese in a bowl.

  2. Saute´ mushrooms and onions in a pan with butter, then drain.

  3. Pour mushrooms and onions into cream cheese, then mix.

  4. Pour cheese into mixture and stir together.

  5. Separate biscuits.

  6. Cut biscuits into half.

  7. Spread half- biscuit out in muffin pan until it cover the entire muffin hole.

  8. Continue process until all muffin holes are completed.

  9. Scoop 1-TBSP and 1-tsp. of the cream cheese mixture and put it into the muffins.

  10. Pat ingredient down into the muffin hole, then use excess dough and close the top partially. 

  11. Sprinkle with parika.

  12. Bake in oven on 400°.

  13. Muffins are done when the edges become a golden brown.

  14. Remove muffins from pan and set them on counter to cool down.

  15. Place on serving tray.

Makes approx. 24
