Stuffed Squash

With amazing results, the Sisterhood has combined cheese, veggies, and herbs to create a delicious dish.Stuffed in squash, the results are much more delicious. You will enjoy every bite.

4 squash

3 cups cooked rice, lightly salted

1 large onion

1 cup of mushrooms

1 cup of cream cheese, soften

2 TBL. sweet basil

1/8 tsp. ground cayenne pepper

1 1/2 TBS. seasoned salt

1/2 cup green tomatoes, diced

1 cup olive oil

1 cup shredded sharp shredded  cheese

 

Stuffing:

  1. Cut squash in half.
  2. Hull the inside of squash and set the hulled squash aside.
  3. In a sauce pan, sautè onions,mushrooms and tomatoes in olive oil (leaving 1/4 of the oil for later use),then add basil,cayenne and seasoning salt; cook for about 5 miniutes.
  4. Add rice in sautè and stir.
  5. Add cream cheese and stir until cheese is melted.
  6. Rub the hulled squash with the rest of the olive oil.
  7. Divide the mixture between the 4 hulled squash( filling each squash).
  8. Wrap in aluminum foil and bake in oven at 395° for 30 miniutes.
  9. Serve when done.(Squash hull is soft)
