Tomato & Basil Bisque

Aromatic basil and tomato are pleasing to the palate in this rich and comforting bisque. 

Ingredients:

2 (10 ¾ ounce) cans tomato undiluted soup
1 can diced tomatoes
2 ½ cups buttermilk
3-4 tablespoons chopped fresh basil
¼ teaspoon fresh ground pepper
¼ cup shredded Swiss cheese

Preparation:

1.Cook first ingredients in a medium sized saucepan over medium heat, stir often, 6-8 minutes.
2.Sprinkle cheese atop bisque before serving and garnish with basil.
3.Serve immediately or chilled.

Makes 3 servings.
