Raw Carrot Cake

7 Carrots (juiced) drink the juice

1 Cup Walnuts

1-1/2 Cups Dates (soaked)

1 Cup Raisins (soaked)

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

2 Bananas

1 Blend carrots in a food processor until well mixed. Set aside in a bowl.

2 Blend walnuts until fine, remove from food processor and place in bowl with carrots.

3 Place dates in food processor and blen until smooth.

4 Add the spices, the bananas, to the mixture of dates in the food processor, and add the carrots and walnuts mixture.

5 Blend the entire mixture until smooth.

6 Remove from processor and stir in the raisins.

7 Place in a pie plate, small loaf pan, or cake pan

For Frosting

1 In a blender or Vita-Mix add the frosting ingredients, 3 tablespoons of honey, 3 tablespoons orange juice, and 1 cup cashews. Blend until smooth. Frost cake and add pumkin seeds on top.
