Pinto Bean Salsa Burger

 The sisterhood enjoys cooking pinto beans as a meal.  Sometimes we use the leftover beans to make bean burgers. They taste wonderful.

Ingredients:

1-16 oz. can pinto beans

12 oz. jar salsa (hot or mild)

½ tsp. chili power

½ garlic power

½ top lawry seasoning salt or seasoning salt

1 cup plain flour

1 ½ cup plain cornmeal

1 cup mild cheddar cheese

½ cup fresh chopped mushrooms

l medium tomatoe diced and drained

1 egg

½ cup oil

Prepartions:

  • Drain the can of pinto beans and mash.
  • Add  beaten egg, and stir together
  • Add chili power, garlic power, seasoning salt, chopped tomatoes, onions, mushrooms, and mix together.
  • Stir in cornmeal, flour, and cheese then  mix together until you can form a dough like ball.
  • Scoop up ½ cup of mixture for each burger, and place into a lightly oil frying pan.
  • Remove from heat, and allow to cool.
  • Serve
  • Optional (salsa can be served over the burger if you like)
