Creamy Herbed Veggie Soup
The Sisterhood here at Tshuwah Community would like you soup lovers to try this soup recipe. It is creamy, full of vegetables, and you will enjoy every spoonful.
Ingredients:
1 stick butter
1 onion,chopped
5 cloves garlic,chopped
2 large carrot sticks,chopped
3 celery stocks,chopped
1 cup sliced mushrooms
1 cup broccoli,chopped
1 cup flour
7-8 cups whole milk
2 potatoes,bake them and cut into bite-sized pieces (leave skins on)
2 TBSP basil
Salt and pepper to taste
Dried or fresh oregano and dill, to taste
8 oz. cream cheese
Preparation:
1. Melt butter.
2. Sautee onion,garlic,carrots,celery,and mushrooms until soft.
3.Add 1 cup flour,then add milk slowly,1 cup at a time, stirring well.
4.When soup is warm,add potatoes and basil; let cook very slowly for about 10 minutes.
5. Add salt,pepper,and herbs to taste.
6. Just before serving,stir in cream cheese.
Makes approx. 6 -7 servings.
